WHAT IS SAMAIA?
The name is also inspired by the traditional Samaia dance, performed by three women who represent beauty, union and collaboration.
In Bilbao, that spirit comes to life thanks to Tamar and Tea, two Georgian friends who decide to make their mothers’ dream come true – both named Maia – of sharing Georgian cuisine, tradition and culture with the world.
One of them keeps the cultural essence alive, transmitting Georgian history and hospitality to those who visit us.
The other is Samaia’s cook, who recreates with her expert hands the recipes of her childhood: handmade doughs, natural ingredients and a deep love for Georgian gastronomy.
Together, these four women represent the true meaning of SAMAIA: union, roots and tradition.
In every dish there is a story, and in every visit, a tribute to Georgia and the recipes that have been passed down from generation to generation.
